Meal Plan 32.0
I will admit that I have been a hot mess in the meal plan preparedness category lately. We have been flying by the seat of our pants way more than I’m comfortable with but thats just life sometimes. We plan to rally this week and get it together haha!
Monday – Cheeseburger salad from Skinny Taste We all love this one and I have fresh lettuce and tomatoes from our CSA this week!
Tuesday – Grilled Salmon, roasted veggies and either rice or sweet potatoes. This has become a weekly standing meal at our house and Kimberly’s. Make our favorite coconut rice or roast some sweet potatoes and call it a day! If you do rice, double it for Wednesdays meal.
Wednesday – Chicken stir fry with rice . Use this recipe from Skinny Taste or just fly by the seat of your pants. Thats the lovely thing about stir fry, you kinda just do what you want.
Thursday – Taco Thursday! Don’t forget your guac and beans…the very best fiber!
Friday – Sweet Potato Shepards Pie – this is me, willing fall weather to come our way. Make one, buy one at Costco, buy the sweet potatoes already mashed for you…theres a few ways to go about it but its always a hit at our house!
Weekend treat: Salted brown butter rice crispy treats – we call these grown up rice crispy treats at our house but of course you can share with the kids. I’ve made these for years and its the one and only rice crispy treat I will eat and they are next level good.
