Meal Plan 1.0

Cheers to the weekend ahead! One of our goals for N.O.W. is to share the things that make life a little easier. Every week I meal plan and I figure if I’m doing it, I might as well share it with you and maybe you will find some new recipes you love along the way! Sometimes I use recipes that I will link to (and they are new to me too!), sometimes my meals are semi-homemade with a Costco find and sometimes its a no recipe required situation. I grew up with a mama who cooked us a home made meal 7 nights a week so I have generally always done the same for my family. I work full time, have all the kid activities and sometimes I just don’t want to cook so my meal plans will often reflect the week I have ahead of me and the predicted energy and time I may have. I hope its a blessing!

Monday: Half Baked Harvest’s Wild Rice and Orzo Soup This looks warm and hearty which feels right for the season!

Tuesday: You already know. TACO TUESDAY!! In my house this is nothing fancy. The standard ground beef taco, refried beans and my home made guacamole. Here’s how I make mine!

Guacamole: 3-4 avocados mashed with a potato masher (I leave mine a little chunky), the juice of 1 lime, 2-3 campari tomatoes, about 1/4 cup diced red onion, cilantro to your liking, maldon salt to taste. Mix it up and go to town!

Wednesday: Half Baked Harvest’s Baked Crunchy Hot Honey Chicken, roasted broccoli (I cut into bite sized florets, toss with olive oil and salt and roast while the chicken bakes), pan fried sweet potatoes. *This chicken has some spice so be aware! If you can’t handle it like us, wherever she calls for something spicy I cut it in half or even less!*

Thursday: Fed and Fit’s Chicken Soup with Ginger and Turmeric My entire family loves this soup and its one I make on repeat. I love it with a loaf of the easiest dutch oven bread if I have the time (this recipe is amazing and has never failed me!)

Friday: Pasta, marinara and chicken sausage (we like Aidells brand) with a salad

Saturday: Lettuce Wraps, fried rice and wontons. This was my easy button meal of the week! I picked up the Sesame Ginger Chicken crumbles at Costco and this is definitely a buy again item for me! For easy Asian themed nights we love the Bibigo brand of fried rice and the chicken cilantro wontons! I can find them at Costco, Walmart and Kroger.

Weekend treat: Chocolate Peanut Butter Oatmeal Bars. So yum and great to have on hand for the week ahead
