Summer meal plans

I love eating in mid summer. There are a million fresh vegetables and is there truly anything like a garden fresh tomato?? We are getting a CSA delivery tomorrow and I look forward to it every time but it always feels extra special in the summer. We can safely say this weeks meal plan is brought to you by….summer. Oh, and if you read yesterdays post about hobbies, then I can solidly say that summer cooking is a hobby of mine 😉

Monday: The chicken pita wrap has mediterranean diet vibes and its been on repeat this summer. If you like a recipe to follow, I am always a fan of Gabby and she never fails me. However, I like to wing it a bit and grill some chicken with a bit of greek seasoning, buy some tzatiki sauce or make this one, grab some Josephs pitas (I find them at Walmart and we love the greek style ones!) and then pile on the fresh lettuce and tomatoes. We add in seasonal fruit on the side and its a hit for us!

Tuesday: Is a summer meal plan even complete without a burger night!?! Add in some corn on the cob and sweet potato fries and its just nostalgic summer on a plate. BTW, I think the secret to a good burger is a good bun. We are loving pretzel buns at the moment.

Wednesday: I love an Asian inspired recipe and this Asian Chicken Slaw caught my eye, partly because I have fresh basil right now. It also sounds so fresh and well rounded!

Thursday: Taco Thursday it is! There will always be a taco night but this week we may make it a fajita night! We have a lot of fun peppers coming in our CSA box so I automatically think about fajitas!

Friday: 30 Minute Pineapple chicken and Coconut Rice from Half Baked Harvest. This one is new to me but it sounds perfect on a Friday! (Edited 8/4/24 This recipe had a LOT of acid between the pineapple and lime juice so if you are sensitive to that as I am, I would recommend changing the recipe up a bit or making something different such as this favorite of ours, Mongolian Chicken)

Weekend Cocktail: Lavendar Lemonade cocktail Kimberly and I have enjoyed making lavendar simple syrup from our lavendar bushes this summer. We have enjoyed it in our coffee with a bit of vanilla creamer (we love Nutpods brand) but I wanted to find a cocktail to try it in as well and this one fits the bill. I’ve made it several times and its so refreshing on an extra hot day!
