Meal Plan 27.0

Here we are on the back half of July already! Kinda wild right? If you are a mama I know you are starting to mentally check out of summer and think about the school year just around the corner. Summer has seemingly flown by and at the same time, felt so long. Anyone else? We have one last summer activity ahead for our family which is a vacation and then we put on our school game faces, ha! Life is ever moving and changing and sometimes something as simple as routine meal planning keeps me feeling sane. Cheers to that!

Monday: Grilled Salmon, summer squash and a salad. We’ve been getting the best squash in our CSA box this summer! I don’t do anything fancy with it because I enjoy the flavor so I just brown it in a pan with a bit of butter, salt and pepper and some onion. I’ve enjoyed this creamy coleslaw recipe from Love and Lemons if you want a fun alternative to a simple green salad.

Tuesday: Tacos, of course, naturally. With summer tomatoes in season, its a great time for pico de gallo! I use a mild pepper in mine because we are babies about spice at my house, haha. Fun fact, did you know tomatoes have lycopene which helps protect our skin from sun damage? Go read about it here, its pretty cool.

Wednesday: BBQ chicken with options. I love to grill up some BBQ chicken in the summer time however chicken in the crockpot with a bottle of BBQ sauce makes for great sandwhiches with Monday’s slaw recipe. I like some roasted sweet potatoes with BBQ chicken as well.

Thursday: We love this asian inspired recipe with some chicken added to it! The coconut rice is an absolute staple for both Kimberly and I but the entire recipe is quite delicious as well!

Friday: Pizza night! Order out or make one from Whats Gabby Cooking. She has several on her site if you search Pizza. This Thai chicken pizza sounds worthy of trying. We love unique pizzas at our house and Gabby never disappoints me.
