Meal Plan 28.0

Monday: Summer grill and fresh veggies: We got loads of goods in our CSA box this week so we are having steak + roasted potatoes, sautéed okra, green beans, and cucumber and tomato salad 

Tuesday: Taco Tuesday + fresh salsa because of so many tomatoes. Pair with lime tortilla chips…sooo good. We have found several recipes from Love and Lemons and you just can’t go wrong.

Wednesday: Salmon + Veggies + coconut rice. I have been using this seasoning recipe for the salmon recently and it’s the perfect blend of salty sweet.

Spice Blend:

  • 4 tsp brown sugar
  • 2 tsp paprika
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1tsp pepper

Thursday: Grilled Chicken on a salad. Easy summer time dinner that can be made to your liking. Top with avocado and some chick peas for fiber punch. 

Friday: Pizza or Pasta: you pick! Sometimes by Friday I am out of ideas and this week we covered all the proteins so enjoy a night out or in with the easy button. 

Summer snack: No-Bake Energy Bites, these little balls are a staple in our house. Loaded with good ingredients and good for my kids on the go or sometimes for breakfast 😉 We have sometimes swapped the PB for almond butter and honey for maple syrup. I do not add the coconut flakes. Enjoy!
