Meal Plan 29.0
Monday: Spaghetti night 🙂 We have not had spaghetti in a while, so boil some noodles, brown some meat, and pour over some jar sauce. Easy does it at our house. But here is my No Ordinary Wisdom tip…i always stir fry some veggies for me and my husband such as onion, peppers, and spinach. Another wow factor to dress up any ordinary spaghetti night is to add some burrata cheese to your plate or bowl. Always serve warm sourdough bread too 🙂
Tuesday: Taco Tuesday, you guessed it. Just the easiest staple that can be molded into a variety of options. Currently making this fresh salsa weekly because it is so good. Don’t forget some lime tortilla chips.
Wednesday: Chicken + coconut rice + raw veggies. Stir fry cut up chicken in this sauce, make your coconut rice, cut up cucumbers and slice carrots to top. I made the sauce for this recipe a while back in a slaw as the recipe calls for, but recently I have found that the sauce/dressing goes so well with any type of asian flare recipe. I love to stir fry veggies or meat in the dressing and serve it with coconut rice. Hope you find it as flavorful as I do. Also, use the Dorot garlic and ginger cubes for the sauce and it makes it that much easier.
Thursday: Waving the white flag for Thursday…meaning this is the hard night of the week when we are all tired and have to rally. My go to is a kid friendly meal and sometimes me and the hubs just eat leftovers. Or you could do take out or a frozen dinner meal. Reader’s choice 🙂
Friday: Grill and Chill night. Another week of school down and time to rest and relax and enjoy a dinner as a family or with friends. Prep some chicken or steak in a marinade Thursday night and add a simple side of roasted potatoes and something green you like.
Weekend treat: Peanut Butter Cookies: I know we have talked about these before but they are so simple and yummy. Quick to whip up and a good treat anytime, even an after school snack.
