Meal Plan 30.0

It feels like we are officially in full swing with the new school year and so far…we’ve kinda been limping through. Now that college move – in has happened in my household I feel like we can work on hitting our stride and getting into good routines including lunch packing etc. My kids love leftovers from dinner as we all do around here and since we are another kid down, I’m pretty sure I still just cook for the same number of people which means we now have leftovers!

Monday – I have not made a meatloaf in a hot minute and its just good comfort food my kids love. Throw in some mashed potatoes (press the easy button and grab the Bob Evan’s ones!) and green beans and every one is happy! If you want a recipe to follow, here is a classic from the NYT!

TuesdaySonoma chicken salad – a simple classic and we will have it on a bed of lettuce from our CSA box and a slice of sourdough!

Wednesday – Chicken sausage sheet pan dinner. We love Aidell’s chicken sausage and it adds a great flavor to a bowl of roasted veggies. We like to roast sweet potatoes, broccoli, mushrooms and onions. Add in the chicken sausage and call it a day!

ThursdayTeriyaki bowls – we love a fresh Asian inspired bowl and this one is simple and easy to modify to your liking!

FridayBA’s Best Bolognese My kids are always happy when there is a pasta night involved! I’ll make some salads to go with it along with my go to Italian dressing!

Weekend Treat – I love following Well Made by Kiley on IG. I came across this recipe for mini almond cruffins and feel like we need this on a Saturday. We are obsessed with all things almond flavor in our house so these sound like the perfect treat!
