Meal Plan 31.0
M: Salmon + coconut rice + steamed broccoli. Salmon is a weekly favorite in our house and we try to eat it regularly due to all of it’s goodness. Add your seasoning of choice to the salmon. The coconut rice is a true favorite of mine and it is hitting the spot recently.
T: Frozen dinner take out from your local grocer…Sarah and I have mentioned this before but the frozen Asian section in our local Kroger has a good easy meal. The brand is Bibigo and we like the chicken, fried rice, and wontons or dumplings. This week I opted for the chicken + soy garlic sauce and fried rice. Add leftover broccoli from Monday’s dinner for extra veggies.
W: Chicken Salad from Mary’s Whole Life. Simple, classic chicken salad recipe that is easy for a weeknight. We are starting back evening classes at church so Wednesday is going to be a simple dinner or crockpot dinner for the remainder of the fall.
Th: Taco Thursday: Gotta have tacos and Thursday is ok instead of Tuesday. We are having trouble finding the tortilla shells that my family loves. My oldest is quite picky about her tortilla shell and she only wants this particular brand. Currently Walmart is the only place I can find them. Kroger and Costco stopped carrying them as far as I know.
F: Date night and chicken nuggets for the kiddos. We get a date this evening. I will just prepare simple kids dinner with chicken nuggets, mac n cheese, and some fruit/veggies.
Weekend prep: I started a new job this week and prepped breakfast which was a huge win. I will definitely prep again because it saved so much time, but gave me my breakfast punch for the day. I basically create an egg mixture of whatever veggies and protein you like, bake, slice and put onto english muffins. Wrap in foil and store in fridge for the week. I warmed in oven while I got ready. Worked out great!
