Meal Plan 34.0

Monday: Salmon Bowls; bake some salmon, make coconut rice (1 can coconut milk + 1 c water + 1 garlic cube + 1 tsp salt + 1.5 c jasmine rice), Add veggies of choice like steamed broccoli or sauted onions and peppers.

Tuesday: Taco Tuesday and all the sides you want. We love black beans, guacamole, salsa, sour cream, cheese, and chips. Preferably lime flavored chips.

Wednesday: Roast in the crockpot, cook on low all day and have you some dinner ready 🙂 Pairing with some classic canned green beans, box mac n cheese, and sauteed onions and mushrooms for me and the hubs.

Thursday: Baked chicken + sweet potatoes + asparagus + fresh fruit, viola!

Friday: Pizza or chicken nugget night for the kiddos because we have a date night. Treat yourself to something easy tonight because it’s Friday. You may be going to a football game, or other event and need to eat quick.

Weekend treat: It’s officially fall now. I simply loved my lavender simple syrup I made over the summer and am sad that I don’t have anymore. However, I forgot about this creamer recipe that I made last year on repeat for my coffee…Here you go 🙂

  • 1 c heavy cream
  • 1 TBS maple syrup
  • 1/3 c pumpkin puree
  • optional cinnamon or nutmeg

Blend in a blender for 10-20 seconds. Pour into a mason jar and store in the refrigerator. If too thick just add water and shake it up. Elevated coffee for fall!
