Happy November! Officially time for Turkey and cranberries.
Monday: Easy button night Chicken Tiki Marsala. This comes from Costco or Kroger. You get two packs at Costco though. I love the flavors of this meal and I usually add a little more chicken. I always pair with coconut rice and steamed broccoli.
Tuesday: Cilantro-Lime Salmon with Tomato-Avocado Salsa: I have made this exact recipe before but also have adopted versions as well. I love all the citrus flavors in this recipe and the avocado adds to my fiber content! Wahoo! This is yummy paired with a side salad or other green veggies of choice + roasted sweet potatoes sliced in rounds or cubes, readers’ choice.
Wednesday: Sheet pan chicken + mashed potatoes + roasted peppers. Another easy button meal for the weeknight win. Bake your chicken at 375 deg for 25 min or so until done 😉 Roast the peppers at the same time or just cut up raw ones for the picky eaters. I typically serve fresh fruit for the girls most nights too.
Thursday: Taco Thursday this week. This is our last week of soccer practice. Making a dinner that kids like and will eat to fuel up after practice. Beans + Guac + meat of choice + cheese + sour cream + salsa.
Friday: Pumpkin Chicken Chili. This is a new recipe for me but it sounded good. The weather is not cooperating this fall and it is just too warm for comfort food in my opinion, but I am trying to sprinkle it in and enjoy the seasonal foods.
Monster Mash Cookies: This is our Halloween tradition. We sort all the candy after Halloween. While we sort, we eat some candy and unwrap majority of the chocolate. I chop up the chocolate candy and substitute it for chocolate chips in this cookie recipe. Typically double the recipe and share with neighbors. Its a win win! We get rid of half the candy, make delicious cookies and also brighten a neighbors day 🙂
