Meal Plan 41.0
We are three weeks away from Thanksgiving which is one of my favorite holidays. I can’t fully think about it quite yet but I am starting to let the planning thoughts trickle in so I’m sure Kimberly and I will both be sharing some favorites over the next couple weeks. In the meantime, our weather is thinking about cooling off next week so I’m ready for soup season! I’ll share a couple favorites in this weeks meal plan!
Monday – Chesseburger Salad from Skinny Taste I don’t think the name is super appealing, haha but everyone in my family loves this and we have lettuce to be used!
Tuesday – Zuppa Toscana – this recipe from Paleo Running Mama is just so good and makes the best lunch the next day as well!
Wednesday – Autumn harvest salad from Half Baked Harvest and grilled chicken.Kimberly and I have both made this salad many times over and while its a bit of work, it truly is so delicious. It might make an appearance on my Thanksgiving menu this year as it has a few times in the past!
Thursday – Taco Thursday! If you are lucky enough to live near a Trader Joes, grab a frozen bag of their gluten free breaded shrimp and make shrimp tacos. I was super impressed when I tried it recently as the breading was nice and light and it got a good crisp in the pan! I will also plan to make my favorite super simple Chipotle Salsa recipe this week from Whats Gabby Cooking. This stuff is SO good and its crazy easy!
Friday – Chicken soup with ginger and tumeric – I make this multiple times every winter as its a favorite in our house. The flavors are delicious and its so good for you! If I get my ducks in a row I’ll make a loaf of fresh bread to go with it.
Weekend treat – It might be time to make my favorite pumpkin bread recipe. There is absolutely nothing healthy about this recipe but it is perfection and I’ve been making it for years now! Let me know if you try it 🙂
