Meal Plan 42.0
Happy December! We are off to the Christmas countdown which evokes both a feeling of excitement and a slight sense of panic?? Not bad panic, just panic in the sense of wanting to do so many fun things and acknowledge so many Christmas traditions, right? In the weeks leading up to Christmas I need simplicity to allow for extra brain space. The weather has also turned quite cold here in TN so it has Kimberly and I wanted all the warm and cozy meals! Heres whats on the plan at my house this week!
Monday: Chicken Corn Chower – this is SO good and so quick and easy to prep! I made it over the Thanksgiving weekend for an easy meal and have wanted it again ever since! The entire family loves it. We have some sensitive dairy tummies in our house so I make sure to buy a grass fed cheddar cheese (Kerrygold usually) in block form and shred it myself and I will use a combination of greek yogurt and almond milk instead of the half and half.
Tuesday: Tacos! Of course :). I am REALLY curious about this Picadillo Taco recipe from Whats Gabby Cooking so this may be the week I try it!
Wednesday: Mongolian Chicken – this is a quick and easy crowd pleaser espeically with some roasted broccoli and our favorite coconut rice!
Thursday: I’ve had the salad version of this so I figure why not try the casserole version! Big mac casserole from Oh Snap Macros is going on the menu!
Friday: Order a pizza, make a pizza, toss in a frozen pizza. We love the ready made pizza dough from Publix the most! If I get it together I’ll try this Sourdough pizza crust and I always get my pizza inspiration from Whats Gabby Cooking. However, if you live near a Trader Joes, their pizza cheese is 10/10 and a simple pepperoni pizza with that cheese is always amazing!
Weekend: Brioche French Toast casserole (high protein!) I’m here for a boost of protein with my favorite breakfast carb!
