Meal Plan 43.0
One more week till Christmas! Here’s to spirit week at my girls’ school (see below), teacher gifts, and last minute shopping, cookie baking, gingerbread house creating, caroling, meal planning, and whatever traditions your family does. We got this mamas 🙂
Monday Grinch Vs. Santa Day aka wear green or red: Baked Salmon, steamed broccoli, and roasted or skillet sweet potatoes. Simple, easy and mindless for this last week of school.
Tuesday Santa hat day: Ina Garten’s perfect roast chicken. Hands down best chicken you will ever taste. The broth it makes will instill many smiles. I typically add extra carrots and sometimes don’t use the fennel bulb. Depends on what I have on hand. Don’t skip the lemon and garlic. Pair with roasted green beans or some dinner rolls.
Wednesday Ugly Sweater Day: Korean Ground Beef Bowls This is a flavorful super easy meal to put together in 30 min or less. I typically have all these ingredients on hand as well. I make our favorite coconut rice with it. Fresh, delicious, and nutritious.
For the Coconut Rice:
Thursday Pajama Day: Taco Thursday this week. Ground chicken or turkey is always a good option if you are tired of the beef. Depending on what is in my freezer is what gets pulled out to use. Don’t forget the black beans or refried beans and guac to add to that fiber. We will all need a little conscious effort for fiber around the holidays.
Friday Holiday Socks Day: School will officially be out. We will either do take out or I might make breakfast for dinner and have French toast. Always a win in our house.
Weekend treat: I will be making sourdough cinnamon rolls several times this holiday season. Once for a brunch and definitely for Christmas morning. Pro tip: use the version with the extra butter 🙂
