Meal Plan 12.0
Monday: Sheet Pan Chicken + veggies. Throw some chicken on a parchment paper lined sheet pan and season however you want. Toss a mix of veggies with olive oil S&P on another sheet pan and bake! You can do both together at 375 deg for about 30 min. I personally love colored bell peppers and broccoli. Add a side of rice or quinoa for a quick carb. We use an instant rice sometimes called Seeds of Change and it is so yummy! We get it at Sam’s.
Tuesday: Taco Tuesday! Can’t beat the high fiber count with adding black beans and guac! I have also leaned towards making nachos lately for myself. I just love a pile of chips with all the toppings. Dragons Love Tacos and so do we 🙂
Wednesday: Brami pasta salad with homemade Italian Dressing I am stealing this idea from Sarah because she and I both think alike on pasta in that regular pasta needs more nutrition. This Brami pasta is much better than the Banza pasta in my opinion with a softer texture and not as dry. I am anticipating left over ham from Easter to go with it. The idea will be pasta, ham, tomatoes, bell peppers, chopped spinach, garbonzo beans, all tossed with the homemade Italian Dressing. I tried this dressing the other day and it is so simple and easy.
Thursday: We now have soccer practice on Thursdays so honestly this will be a kid night of chicken nuggets, baked beans, and raw fruits and veggies. That is my go to meal for the kids because it hits all the macros they need with protein, fiber, carbs, and vitamins/minerals from the fruit and veggies. I used to get annoyed with myself when I fed my kids chicken nuggets, but I have learned to appreciate the simplicity of it and love how we make it a rounded out meal. So here is your freedom card to serve chicken nuggets and not beat yourself up over it.
Friday: Burger sliders + homemade fries. I talked about the brioche slider buns at Sam’s or Costco and we truly love them. The size is just right for my girls and I always eat two! I just patty out the hamburger meat into smaller portions and I don’t feel like we waste as much food. Homemade fries are whatever kind of potato you have on hand, sliced, seasoned and baked at high temp like 400 deg for 30 min or so until you like the texture 🙂
Sweet treat for Easter: Pumpkin Coconut Cake This cake! I could eat the whole thing. Sarah stumbled upon this cake recipe a couple of Thanksgivings ago, but because of the pumpkin, it takes on an orange color and makes me think of carrots, which remind me of Easter 🙂 You will not be disappointed in this cake. Even starts with a cake mix! The brown butter cream cheese frosting will make your mouth water just thinking about it. So, make it now or keep it tucked away for special holidays. A year round cake worth the effort!
