Meal Plan 35.0

The last week of September…was it long or short? And who is ready for fall recipes? I’m on the fence because our fall weather has yet to settle in here in TN. I think I could make some pumpkin muffins though and maybe even put out my fall wreath now! I’m ready to welcome October and cooler temps!

Monday – Salmon on the grill, roasted sweet potatoes and broccoli. My go-to is the trader joes salmon rub! Its just so good!

TuesdayEgg roll in a bowl – we love asian flavors and this is always a hit at my house! I like to add some of the bibigo chicken wontons on the side as well

WednesdayRoasted red pepper and tomato pasta – Kimberly and I will both admit to not really being big pasta people but my kids still love it and since we discovered Brami pasta (at our Walmart!) we enjoy it a bit more. The roasted red pepper and tomato sauce makes it a little more interesting and fun and I have peppers I need to use! Add a side salad and some Aidelles chicken sausage and its a meal!

Thursday – Taco Thursday! Make it how you like it, just don’t forget the beans and guac!

Friday Turkey and butternut squash skillet – I’ll tip toe into fall recipes with this one and maybe add some kale to it as well

Weekend treat: protein pumpkin muffins – Kimberly and I both love recipes from The Salted Sweets so I’m excited to try her protein pumpkin muffins. I will probably add some dark chocolate chips to mine just because. And if you are like me and hate washing a muffin tin…just but the foil disposable ones. I always keep a set around. If you ever need a cake recipe, her pumpkin coconut cake it a favorite at everyones house!
