Meal plan 39.0
We have arrived at the time in October that I want to put everything in slow motion. The trees are nearly at their peak and I just want to bottle it up so the season lasts just a bit longer! We have a mix of warmer and cooler days here in Tennessee so that makes me want a whole mix of soups and comfort foods, thus this weeks menu!
Monday – Meatloaf, roasted potatoes, green beans or broccoli. I tend to wing it with a meatloaf but if you like the comfort of a recipe, this one is a classic!
Tuesday – Turkey and butternut squash skillet – this is a repeat from a couple of weeks ago! My kids liked it and so did I, and it made great lunch leftovers.
Wednesday – Grilled Salmon, roasted sweet potatoes and broccoli. If you are close to a trader joes get some of their salmon rub…its now a staple around here 🙂
Thursday – Taco night!
Friday – Chicken pot pie soup – I make this one every season and the kids love it. If I’m on top of it, I’ll make some fresh sourdough to go with it!
Weekend treat – I think I need to include both a savory and a sweet here because I have a unique one I want to try! Savory french toast! I love french toast and would take it over a pancake any day of the week but I have not tried a savory version and this is the perfect pairing to the french breakfast radishes that are in my CSA box this week!
–Sourdough Pumpkin cinnamon roll scones – You can use greek yogurt in these if you don’t have sourdough! We recently had some scones that were so amazing and I have not stopped thinking about them, so naturally this recipe is calling my name!
Happy cooking!
