Meal Plan 11.0

Its been a full week and its time to get my ducks in a row for the weekend to hit the grocery store! I’ll be in Kimberly’s big city this weekend so there may be a Trader Joe’s run in my future. If you read the blog post this week then you probably have some better insight to the nutritional changes both Kimberly and I are working on making…give us all the fiber and all the protein! Cheers to the people doing the research that help us live our best lives in every season!

Monday Chicken Corn Chowder This one is loved by my entire family and it is SO easy. We have some sensitive tummies in our family so I sub out the half and half for greek yogurt and I make sure I buy a grass fed cheddar cheese and freshly grate it and it makes all the difference in the world! The beans and chicken both make this a win as well!

Tuesday – Taco day!! Don’t forget your refried beans and guac! I’m going to get some of our favorite chips (Siete’s Maize and lime!) while I’m in the big city this weekend too! A good tortilla chips is like a good bun. It makes all the difference.

Wednesday – Easy Coconut Beef – My friend shared this recipe with me and raved about it so we are trying it this week!

2 pounds beef chuck or rump roast

1 15 oz can coconut milk

1 14.5oz can diced tomatoes

1/4 cup soy sauce

1 Tbsp yellow curry

Use a 6 quart slow cooker. Place the roast inside, add additional ingredients. Stir to combine and cover and cook on low for 8 hours or high for 5 hours. Shred the meat and serve over rice along with your favorite vegetable! Talk about easy!

Thursday – Salmon (with my favorite Trader Joe’s salmon rub!), roasted sweet potatoes and roasted asparagus

FridayConfetti Chicken Casserole – from a favorite, Fed and Fit, this one is new to me and sounds super yum. I have a feeling we will all love it.

Lunch idea – I have been making a pasta salad with Brami pasta that I found at Walmart. This pasta has beans in it so its high in fiber and protein but has a great texture! I mix in either chicken or tuna, cucumber, red onion, tomatos and pepitas. Then I mix up this dressing from Love and Lemons which is 10/10 SO good and will now and forever be my go to quick mix dressing.
