Meal Plan 20.0

Its hard to believe we’ve hit 20 meal plans! And its hard to believe that we are embarking on the summer season! My friend recently gave me a mother’s day gift of a baby webber charcoal grill and its amazing. We have not had a grill and I love grilled food so much so this has been SO much fun for us. His name is smokey Joe and he’s a good man, so get ready for some favorite marinades in the summer meal plans!

Monday: Lemon Herb Grilled Chicken, rice pilaf, salad. I grew up on this chicken marinade and will never be tired of it! My mom found it way back when and it is truly so delicious!

3/4 cup neutral oil (I use avocado oil, I think my mom always used vegetable oil)

1/4 cup lemon juice

3/4 cup water

2 tsp seasoned salt

2 tsp paprika

2 tsp sweet basil (dried)

2 tsp thyme

1/2 tsp garlic powder

1 Tab. soy sauce

3 tsp sugar

Mix all ingredients, add chicken, let it marinade at least 4 hours but the longer the better!

Tuesday: Tacos but its time for fish tacos this week I think. We got a box of mangos at Costco last week and mango salsa is calling my name! I really like this one from Love and Lemons

Wednesday: Steak Salads from Well Plated We need to mix it up a bit and throw some red meat in there! I will try to add in a loaf of fresh bread to go with this meal!

Thursday: Burgers on the grill! Is there anything like it? The menu already has a red meat some I am going to go with a chicken burger with a twist. Half Baked Harvest’s Chipolte Cheddar Chicken burgers it is!

Friday: Big ole’ pasta salad! This is always a crowd pleaser. I’ll use my Brami pasta and throw in all the veggies and add some grilled chicken, then dress it with my new favorite Italian dressing from love and lemons

Weekend treat: Its a long weekend and in my book that calls for some sourdough cinnamon rolls. Kimberly and I both love this recipe!
