Meal Plan 3.0

Happy Friday! Another week down another week ahead to plan for all the food for all the people. We recently ate out and got some sushi and curry which inspired me to find a homemade curry recipe for this week.

Monday: Easy Coconut Curry Chicken : Curry may sound intimidating but I promise you this is super simple. It’s also versatile with easy swaps for veggies you may like. I have made this curry recipe for a long time on and off thanks to a neighbor from where we moved from. I keep it open in my tabs on my phone and should probably write it down one day!

Tuesday: Kid night! I asked my kids what they wanted to eat for dinner and here is the run down.

  1. Mac n Cheese: the box kind, we like Annie’s.
  2. Rolls: Homemade sourdough rolls if I have time. Otherwise, it might be Sister Shubert Rolls in the freezer
  3. Chicken Nuggets
  4. Fresh fruit and veggies of what we have in the fridge

Wednesday: Spaghetti with Meat Balls: Easy as pie right? Spaghetti noodles of any kind and a jar of sauce, voila! As far as the meatballs go I can give you a simple recipe idea here mainly because I just dump a lot of spices and mix it all together with my hands, roll them out and bake for about 25 min at 350 deg.

Meatballs: 1lb ground beef, 1 egg, 1/4 c oatmeal, salt and pepper, garlic powder, onion powder, Italian seasoning, and a dash of hot sauce.

Thursday: Korean Ground Beef Bowls: These bowls are delicious and we love them. Super easy and quick for a week night. I can keep it all separated for my picky kids, but overall it seems to be a win in my house. And when I say “win” I mean at least 2/4 kids eat my meal. Ha!

Friday: Chicken Tettrazini: See end of the blog post for Sarah’s mom’s tettrazini recipe and I am putting my mom’s recipe here as well. Please send us a note and tell us which one you tried and how you liked it? Did it bring back any memories?

Snack during the week: Copy Cat Perfect Bars : Perfect Bars are a favorite snack of mine and have been for years, but I found this homemade version a while back and we have been enjoying them most weeks. My three year old calls them “Kellen bars.” She is the biggest fan and I also take them to work or pop a little one in my kids lunches. You use a protein powder and I am super particular about protein powders, but that can be a topic of conversation for another day. Just find one you like and use it. I currently am using Clean Simple Eats Vanilla Protein Powder.

Breakfast idea: Ham and Veggie Breakfast Casserole: Having this casserole on hand for the week is an easy breakfast option for me and my husband. A couple of my kids actually like it which is good too, but mainly for me and the hubs. Again, I have made it so long that I tend to use what I have on hand, but the actual recipe is simply delectable.
