Meal Plan 21.0
Summer is here and my kiddos are swimming daily and eating like boys! Ha! We are having second breakfasts and they are eating more of their dinner each night. Hope this meal plan helps give you a little sanity through this next week.
Monday: Crunchy Cabbage Slaw with Sesame Ginger Dressing We got a napa cabbage in our CSA box this week and I searched for a recipe and want to try this one. I like Minimalist Baker anyway and she has lots of yummy recipes I have tried in the past. I also love an Asian flare to dinners so hoping this one rings true.
Tuesday: Traditionally taco Tuesday, but I am bringing back the skillet nachos from Half Baked Harvest. We mentioned this recipe once upon a time, but I have been craving it again, so going to make this dish instead of Tacos. I sub ground beef instead of ground chicken and do not use the chipotle chili. I think you could add some chipotle powder if you like that flavor but I do not.
Wednesday: Baked Salmon + coconut rice + steamed broccoli with fresh fruit cut up 🙂
Thursday: Sheet pan chicken + sweet potato cubes/fries/squares + green salad. Preheat oven to 400. Cut sweet potatoes however you like, toss with olive oil and S&P. On a separate baking sheet put your chicken breasts or thighs and season with whatever fits your fancy and bake together for 35 min. Prep salad while the dinner is in the oven.
Friday: Grill night! Grab some steaks or burgers and fire up your Smokey Joe 😉 I have enjoyed making smaller burgers and getting slider buns. The smaller buns work so much better for my kiddos and I enjoy them too. Sam’s Club has a pack of 24 brioche slider buns for like $5. Its a win for our household.
Weekend Treat: Sourdough Cinnamon Rolls…If you have jumped on the sourdough train then these are a must try. They truly are not difficult but just read and be prepared for several steps. Hands down best cinnamon rolls I have had, and one of my friends said they were “restaurant worthy.”
